    The batter makes the dish!

    Oil, for deep frying
    2-1/2 cups all-purpose flour
    1/4 cup sugar
    1-1/2 tsp. salt 1-1/2 cups milk
    3 eggs
    1-1/2 tsp. oil
    1-1/2 lb. bunch fresh broccoli, separated into stalks

    Preheat oil in a deep-fat fryer, wok or electric frypan to 350F.Combine flour, sugar and salt in a medium bowl. Whisk milk, eggs and oil in another bowl. Gradually stir egg mixture into dry ingredients, blending well. Dip broccoli stalks into batter, coating completely. Add to oil in batches. Do NOT crowd. Fry until golden brown, about 3 to 5 minutes. Drain on paper towels.
    Quantity: 4 to 6 servings
