Puffed Broccoli-Cheese Casserole

1 can cream of broccoli soup
1 soup can of milk
¼ cup flour
1 tsp. dry mustard
¼ tsp red pepper
2 cups shredded cheese (cheddar, moz etc)
4 large eggs, separated
1 pk. (10 oz) frozen chopped broccoli (thawed and squeezed)
1. Mix soup, milk, flour, mustard and pepper in large saucepan
with a whisk till blended. Stir over med. Heat till almost
boiling.
2. Remove from heat, add cheeses, stir till melted.
3. Stir in egg YOLKS and broccoli till blended. Let cool
slightly (put in refridge for 10 mins).
4. Beat egg whites till stiff, then FOLD into broccoli mixture.
5. Pour into greased 11 x 7 x 1½ inch dish
6. Bake in 350° F for 50 minutes
Serves 8 as a side dish. Can add stir fried chicken, 1 large
sautéed onion and 2 cloves sautéed garlic. Kind of like a 2
inch soufflé.
