Sweet & Sour Red Cabbage

2 lb. head red cabbage
4 bacon slices
1 onion
1 tart apple
6 whole allspice
1/2 tsp. salt
2 tsp. honey
6 tbsp. red wine or wine vinegar
Discard any damaged outer leaves from the cabbage. Quarter, cut away core & thick ribs & shred leaves. Chop bacon. Peel & chop onion. Cook bacon in flameproof casserole over a low heat until fat starts to run. Add onion & cook for 5 mins., stirring. Peel, core & chop apple & add to casserole w/cabbage. Crush allspice & add to casserole w/salt, honey & wine or vinegar. Mix well, then cover & simmer for 1 hr. If there's too much liquid at the end of the cooking time, remove the lid & continue simmering. Serve hot.
