Carrot Fritters

5-6 medium-sized carrots, finely chopped or grated (not purred)
2 eggs
1/2 teaspoon salt
1 tablespoon sugar
1/8 teaspoon cumin (optional)
1/4 cup Unbleached All-Purpose Flour
4 tablespoons (1/2 stick) butter
Mix carrots, eggs, salt, sugar, cumin (if desired), and flour in a medium-size mixing bowl. Set aside.
Melt enough of the butter in a medium-size skillet to just cover the bottom of the pan. Drop the batter by tablespoons into the hot butter. Fry fritters for a couple of minutes on each side, or until they set and golden brown. Cool on absorbent paper. Makes about 20 fritters.
