Honey Gingered Carrots

INGREDIENTS:
1 pound or 8 medium sized carrots
1/2 stick of butter
1/2 teaspoon cumin seed
2 tablespoons honey
1 fresh ginger root
Begin by cutting the carrots into 3 inch pieces that are about 1/2 inch wide. Then take the fresh ginger root and cut off a 2 inch piece, peel and thinly slice this piece. Next toast 1/2 teaspoon of cumin seed by stirring them around in a hot skillet for about 1 minute then remove them from the skillet and set aside.
Over medium heat melt 1/2 a stick of butter or a substitute and add the carrots and ginger to sauté for 3 to 4 minutes. Once this is done add the 2 tablespoons of honey and continue to sauté for another 4 minutes until the carrots are tender but firm.
Now all that is left to finish this dish is to sprinkle the toasted cumin seed over the top. Serve warm.
