PARSLEY CAULIFLOWER MASH WITH CHEESE

3 cloves sliced garlic
1 tbs. olive oil
1/2 head cauliflower, cut in florets
1/4 cup chicken broth
1/4 tsp. each salt and pepper
1/3 cup buttermilk, warmed
2 tbs. grated Parmesan cheese
2 tbs. chopped parsley
In saucepan, cook garlic in oil 5 min. or until golden brown. Add cauliflower, broth, salt and pepper, bring to a boil, reduce heat cover and simmer 12 min. or until cauliflower is tender. Using potato masher, mash
cauliflower mixture, buttermilk, and cheese. Stir in parsley. Place in serving bowl and GARNISH WITH A SPRIG OF THYME. Makes 4 servings.*
