    Flour
    Salt and pepper
    Olive oil
    Egg

    Cut egg plant into rings. Mix flour and salt and pepper to taste. Mix in egg. Coat egg plant in egg mixture then in flour mixture then fry in hot olive oil. Cook until golden. Place on brown paper to absorb oil.

    Enjoy hot or cold
