2 eggs
1 cup buttermilk
1 tsp salt
1/2 tsp baking soda
2 tsp baking powder
1 1/2 cups all-purpose flour
4 tblsp corn meal
1 medium eggplant, peeled and cubed
Blend all ingredients except eggplant to form batter. Fold eggplant into batter; drop into hot bacon drippings in frying pan in pancake sized portions. Turn once; drain on paper towels. Serve hot
