    Mushrooms Parmesan

    Aunt Saunny

    1 lb. mushrooms with 1" to 2" caps
    2 T. olive oil
    1/4 cup chopped onion
    1 large clove garlic, chopped
    1/3 C. dry bread crumbs
    3 T. Parmesan cheese
    1 T. chopped parsley
    1/2 tsp. salt
    1/2 tsp. oregano

    Grease shallow pan large enough to hold mushrooms. Clean mushrooms, cut off stems and save. Place caps in prepared pan, open side up. Set aside. Finely chop mushroom stems. Heat oil in skillet. Add stems, onions and garlic. Cook slowly until onions and garlic are lightly browned. Combine the rest of the ingredients. Mix in the onion-garlic mixture. Pile mixture into the caps. Sprinkle with a little olive oil. Bake at 400F. degrees for 15 to 20 minutes or until mushrooms are tender and tops are browned.
