Baby Onions with Capers

Prep: 10 min, Cook: 5 min, plus chilling time.
1 lb. pearl onions
1-1/2 cups canned chopped tomatoes
1 Tbs. capers
2 tsp. canned tomato purée
1/2 tsp. brown sugar
1 tsp. vinegar
2 Tbs. olive oil
2 Tbs. parsley, chopped
Plunge onions into boiling water and boil 1-2 minutes. Drain and cool slightly. Remove skins and return to pan. Stir in tomatoes, capers, tomato purée, sugar, vinegar and oil. Cover and simmer 5 minutes. Stir in parsley. Transfer to a serving dish and chill before serving.
