VIDALIA ONION CASSEROLE

13 vidalia onions, sliced 1/8 to 1/4-inch thick
1 pound bacon, fried and crumbled
1 cup Parmesan cheese
1/2 package of Ritz Crackers
Fry bacon and remove from pan. Reserve drippings. Sauté onions in drippings, turning them to coat with fat. This requires two skillets, using 2 tablespoons of drippings per skillet. Cook until soft. Put half the onions in a 9x13 baking dish. Top with half the cheese then half the crumbled bacon. Repeat layers, finishing top layer with crumbled crackers. Bake at 350 degrees for 45 minutes.
