Meal in a Pepper

4 large green peppers
15 oz can black beans, drained and rinsed
1 c fresh or frozen corn
1 small onion, chopped
2 cloves garlic, minced
1 c water
1/3 c long grain rice
4 oz can chopped green chilis
1/4 - 1/2 t coriander
3/4 c shredded mozzarella cheese
Remove the tops from the green peppers, pull out the seeds and ribs. Fill a large pot with water and bring to a boil. Immerse the peppers in the water and cook for about 4 to 5 minutes, or until barely tender. Drain immediately.
In a medium saucepan, combine the black beans, corn, onion, garlic, rice, and water. Heat to a boil, then cover, reduce heat, and simmer for 15 to 20 minutes, or until the rice is tender. When cooked, stir in the green chilis, coriander, and half of the cheese.
Stuff the peppers with this mixture, topping with the remaining cheese. Arrange the peppers, standing upright, in a casserole dish and bake at 400 degrees for 5 to 10 minutes.
