Pepper Fritters

Ingredients
1 egg 1/4 cup milk
1 cup pancake mix 17 oz. can whole kernel corn, drained
1 bell pepper, chopped 1/2 tsp. Louisiana hot sauce
1/4 inch oil in skillet 1 tsp. sugar
Preparation
Beat Egg slightly. Add milk, pancake mix, corn, pepper, hot sauce, & sugar. Stir until well blended. Batter should not be thin, add more pancake mix if needed. Drop by teaspoonfuls (not heaping) into hot oil. Brown on one side & then on the other side. Turn with spatula, do not stick with a fork to turn fritter. Drain on paper towels.
