RANCH POTATO CASSEROLE

5 medium red potatoes
1/2 cup sour cream
1/2 cup ranch-style dressing
1/4 cup bacon bits or cooked, crumbled bacon
1 tbsp. dried parsley
1 cup shredded cheddar cheese, divided
TOPPING
1 cup slightly crushed cornflakes cereal
2 tbsp. butter, melted
1. Cook potatoes until tender; quarter, leaving skins on. Set aside.
2. Combine sour cream, dressing, bacon bits, parsley and 1/2 cup cheese.
3. Place potatoes in a greased 11x7-inch baking dish. Pour sour cream mixture over potatoes, and gently stir to mix. Top with remaining cheese.
4. Combine cornflakes and butter; sprinkle over casserole.
5. Bake at 350º for 30 to 35 minutes. Yield: 4 to 6 servings.
