TWICE BAKED POTATOES WITH ROASTED SHALLO

Heat oven to 4OO DEGREES. Coat a rimmed baking sheet with nonstick spray. Prick each of 6 potatoes a few times with a fork. Place on 1 side of baking sheet. Scatter 6 sliced shallots in an even layer on the other side of baking sheet. Coat shallots with spray. Bake 25 min. tossing shallots once, until golden. Remove to a bowl. Continue baking potatoes 35 min. or until soft. Cut potatoes in half lengthwise, scoop insides into bowl. Mash with potato masher until smooth, adding 1/2 cup milk alittle at a time. Beat in 1/2 cup garlic and herb cheese spread, and 1 tsp. salt, then 1 cup shredded Cheddar cheese. Stir in half the shallots. Spoon into skins, mounding in center. Place potatoes on baking sheet, bake 20 min. or until hot. TO SERVE: Sprinkle remaining shallots over potatoes. Transfer to serving platter. GARNISH WITH: finely chopped parsley and diced red bell pepper. MAKES 6 SERVINGS.*
