Tater Lovin Folks Potatoes

-6 c. red potatoes, peeled and chopped into cubes
-1 onion, chopped
-1 c. sour cream
1 small jar pimientoes
1 can mushroom stems and pieces--drained
-2 c. shredded Monterey Jack cheese
-2 c. shredded Cheddar cheese
-1/4 c. butter, melted
-1/2 t. salt
-1/2 t. pepper
-1-1/2 c. bread crumbs
-Boil potatoes and onion together until tender; drain.
-Mix in sour cream,pimientoes, cheese, butter, mushrooms,salt and pepper; spoon into a greased 2-quart baking dish.
-Sprinkle bread crumbs on top;
-Bake at 350 degrees for 30 minutes.
