Rhubarb Crumb Pie

1 pound rhubarb
1 large egg
1 cup sugar
3/4 cup plus 2 TBS flour
1 tsp vanilla
1 unbaked 8-inch pie crust
1/2 cup packed brown sugar
1 stick softened margarine
Recipe
1. Heat oven to 400 degrees. Trim ends off rhubarb and wash well. Cut into 1-inch pieces.
2. In a medium bowl, beat egg until frothy. Beat in white sugar, 2TBS flour and vanilla. Stir in rhubarb.
3. Spoon rhubarb mixture into pie crust. In a small bowl, with a fork combine 3/4 cup flour, brown sugar and margarine until mixture resembles coarse crumbs. Sprinkle evenly over rhubarb filling.
4. Bake pie for 10 minutes. Reduce heat to 350 degrees and bake for 35 minutes or until golden brown and bubbly. Cool to room temp on wire rack before cutting.
