ZUCCHINI: Buttered Buds

Ingredients:
15 squash flowers (zucchini or pumpkin)
2 eggs
2 Tbsp. grated Italian cheese
1/4 c. flour
salt and pepper to taste
Directions:
Beat eggs. Add grated cheese and flour and mix well.
Remove centers of flowers and stems; wash and dry. Gently cut with knife or kitchen scissors. Add to mixture. Add vegetable oil to frying pan. Panfry as you would potato pancakes. Makes about 12 patties
