ZUCCHINI: Crispy Zucchini Sticks

1/2 cup pasta sauce or salsa
3/4 cup sour cream
3/4 lb zucchini
2/3 cup seasoned bread crumbs
1/2 cup cornmeal
2 tbsp grated Parmesan cheese
2 tbsp minced parsley
Salt to taste
1/3 cup flour
2 large eggs beaten
1. Preheat oven to 450.
2. Combine sauce and sour cream; set aside.
3. Cut each zucchini lengthwise into quarters, cut each quarter crosswise into 3 pieces.
4. Combine the bread crumbs and the next 4 ingredients (through salt) in a shallow dish. Dredge zucchini pieces in flour. Dip in egg and dredge in bread crumb mixture.
5. Place the zucchini on a large baking sheet coated with garlic cooking spray. Bake at 450 for 25 minutes turning once until lightly browned and crisp. Serve with sauce.
