Jonathan Winter's Stuffed Zucchini

3 zucchinis, 5 or 6" long - split lengthwise. Parboil in boiling salted water for 2 minutes. Drain and scoop out centers. Combine centers with:
1/2 pint sour cream
1/4 cup chopped canned mushrooms
1/2 cup soft bread crumbs
2 Tablespoons minced onion
1/2 teaspoon salt
Pepper and a pinch of crumbled dried oregano
Fill squash shells with this mixture; sprinkle tops with more bread crumbs. Dot with 2 tablespoons butter and bake at 350 degrees for 20 minutes. Serves 6.
