Skillet Zucchini Combo

3 medium ears corn
1 medium onion quartered and sliced
1 red bell pepper cut in to 1/2 inch squares
1 clove garlic minced
2 tablespoons vegetable oil
3 medium zucchini sliced about 1 pound
1 large tomato peeled and chopped
2 jalapeno peppers seeded and minced
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried basil
1/2 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 cup freshly grated parmesan cheese
Cut corn kernels from cob and set aside. Sauté onion, bell pepper and garlic in oil in a large skillet 5 minutes. Add zucchini and cook stirring often 7 minutes. Add corn, tomato and next four ingredients. Cover and cook over low heat, stirring often 7 minutes. Sprinkle with parmesan and serve
immediately.
Yield 6 side dish or 3 main dish servings.
