    1/2 cup butter
    4 acorn squash (small size)
    1/4 cup chopped onion
    3 cups crumbled day old cornbread
    1 cup or 1 can (6 1/2 oz) crabmeat, tuna or salmon drained and flaked
    1 tablespoon lemon juice
    2 eggs, beaten

    Cut squash in half, remove seeds. Melt 1/4 cup butter in baking pan. Place squash, skin side up, in pan and bake for 30 minutes in a 350 degree oven. Melt remaining butter in a skillet and saute' the onion in this until tender. Combine corn bread crumbles and meat. Add onion, butter, lemon juice
    and beaten egg. Mix well. Remove squash, turn, brush with butter and fill with the mixture. Bake another 30 minutes. 8 portions.
