Yellow Squash Surprise

4 slices bacon
1 large onion, cut into 1/4 inch slices
3 carrots, cut into 1/4 inch rounds
1 red bell pepper, seeded and sliced
1/2 lb. mushrooms, fresh or canned, sliced
2 lbs. yellow squash, cut into 1/2 inch rounds
3-1/3 cups canned tomatoes
Cook bacon in a heavy nonstick skillet over medium high heat 5-6 minutes, turning occasionally. Add remaining ingredients, except tomatoes. Reduce heat to low and simmer 20 minutes. Add canned tomatoes and simmer another 10 minutes.
