Zucchini Fritters

5 tablespoons Bisquick
1/2 cup Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
2 eggs, beaten
2 tablespoons butter
2 cups zucchini, grated
Recipe
In a large bowl blend the Bisquick, Parmesan cheese, salt, and pepper. Add the eggs and mix well. Stir in the zucchini. Grease skillet or griddle with butter. Pour the batter into the pan and fry for 3 minutes on each side, serve warm. Yields: 8 to 10 fritters.
