    Aunt Saunny
    Makes Two Loaves

    Ingredients:

    3 large Eggs
    2 cups Granulated Sugar
    2 cups Zucchini, peeled, shredded
    1 cup Canola Oil
    2 tsp. Vanilla Extract
    3 cups All-purpose Flour
    1/2 cup Walnuts, chopped
    1 tsp. Salt
    1 tsp. Baking Soda
    1 tsp. Baking Powder
    2 tsp. ground Cinnamon
    1/2 tsp. ground Nutmeg
    1/4 tsp. ground Cloves



    Grease bottoms only of two 9x5-inch or 8x4-inch loaf pans and pre-heat oven to 325-F degrees.
    In a large bowl, beat eggs until foamy.
    Stir in sugar, zucchini, oil and vanilla.
    Add flour, walnuts, salt, baking soda, baking powder, cinnamon, nutmeg and cloves Blend well.

    Pour batter into prepared pans.
    Bake for 50 to 60 minutes or until a toothpick, inserted in center of loaf, comes out clean.
    Let cool, remove from pans, slice to serve.
