Butterscotch Sweet Potato Casserole

3 sweet potatoes
1-1/2 cups sugar
3 large eggs
1/2 stick (1/4 cup) butter
1/2 cup milk
1 (3 oz) box instant butterscotch pudding
Boil, drain and mash sweet potatoes.
In a large bowl, mix all ingredients well. Place in buttered
casserole
dish.
Bake at 325 degrees until nearly firm in center.
NOTE: You can also bake this in an unbaked 9-inch pie shell.
