Creamed Turnips

* 1-1/2 lbs. turnips, peeled and shredded
* 1/4 tsp. baking soda
* 1 Tbs. unsalted butter
* 1/4 cup light cream
Place turnips in a heavy nonreactive saucepan with just enough water to cover. Bring to a boil over high heat. Remove from heat and quickly stir in baking soda to remove bitterness. Drain turnips. Rinse underrunning water and
drain again. Return to saucepan. Add butter, cream and salt and pepper to taste. Simmer over medium heat 3-4 minutes
