Javanese Pork Satay

Recipe Introduction
I've slightly modified the recipe by par boiling the pork before marinating in a pork or chicken stock or broth. By par boiling before marinating, it tenderizes the meat and it wouldn't draw out the marinade seasoning.
Servings: 8
List of Ingredients
- 8 pounds boneless pork loin
- 16 tablespoons smooth peanut butter
- 4 cups onion, minced
- 8 cloves garlic, minced
- 16 tablespoons lemon juice
- 16 tablespoons soy sauce
- 8 tablespoons brown sugar
- 8 dashes hot pepper sauce (Tabasco or Filipino hot sauce)
- 8 tablespoons cooking oil
Instructions
- Cut pork into 1/2" cubes. Blend remaining ingredients together in a blender.
- After par boiling, marinate pork in this mixture for several hours to overnight. Thread pork on skewers and grill over hot coals for eight to 10 minutes, turning occasionally, until done.
Final Comments
Note: If using bamboo skewers, soak skewers in water for one hour or longer to prevent burning.
