    Greek Shrimp with Pasta

    This marinated shrimp along with the Greek sauce leaves this dish with an excellent after taste!!

    List of Ingredients


    • 1 cup olive oil
    • 2 teaspoons oregano
    • 4 teaspoons garlic, minced or crushed
    • 4 pounds peeled and deveined shrimp
    • 5 1/3 cups medium chopped tomatoes
    • 2 teaspoons red pepper flakes
    • 1 1/3 cups dry white wine
    • 2 pounds rigatoni (raw)
    • salt and pepper
    • 1 1/3 pounds feta cheese, crumbled
    • 1 1/3 cups fresh basil (1-1/2 Cup dry)


    Instructions


    1. Preheat oven to 400 F. Set a large pot of water on the stove to boil.

    2. In a large bottomed pot, saute the garlic in half the olive oil. Cook briefly, then add the tomatoes.
    3. Cook briefly, then add the wine, salt, pepper, basil and oregano. Simmer on low heat for about 10 minutes.

    4. Meanwhile, Marinate shrimp in Italian Dressing For at least 20 minutes. Do this 10 minutes before starting the wine mixture.
    5. When the sauce is ready saute the shrimp briefly in remaining olive oil.Sprinkle with pepper flakes as they cook.
    6. Remove the shrimp from heat when they lose their opacity. Put the shrimp in a baking pan.
    7. Sprinkle with crumbled feta. Spoon tomato sauce over feta.
    8. Bake about 10 minutes. Meanwhile cook rigatoni. To serve, spoon mixture over rigatoni.
