Recipe Introduction
I have used a lot of the recipes from TJ Hill appetites Catered and improvised on them. His recipes are great just standing alone, however I have the freedom to improvise and still maintain the original base flavor.

List of Ingredients
- 20 ounces canned Dole Pineapple Slices, in syrup
- 3 pounds chicken thigh
- 2 tablespoons unsalted butter
- 1/4 cup white wine
- 3 tablespoons soy sauce
- 2 tablespoons garlic, minced
- 2 tablespoons candied ginger, minced
- 1/2 tablespoon kosher salt
- 1 cup red bell pepper, medium dice
- 1 cup celery, bias-sliced
- 1/2 cup scallions, bias-sliced
- 1 papaya, peeled, seeded, and sliced
- 2 tablespoons fresh lemon juice, strained
- 1 tablespoon cornstarch
- 1/2 cup chicken broth or stock
Instructions
- DRAIN PINEAPPLE SLICES, RESERVING SYRUP
- SAUTE CHICKEN IN BUTTER, UNTIL LIGHTLY BROWNED, DRAIN COMBINE RESERVED PINEAPPLE SYRUP, WINE, SOY SAUCE, GARLIC, GINGER, AND SALT-MIX WELL
POUR OVER CHICKEN
- SIMMER, COVERED, FOR 15 MINUTES
TURN AND SIMMER, COVERED FOR ANOTHER 15 MINUTES
- REMOVE CHICKEN TO A HEATED PLATTER
- ADD PINEAPPLE, BELL PEPPER, CELERY, SCALLIONS, AND PAPAYA TO SKILLET
DISSOLVE CORNSTARCH IN WATER AND ADD TO SKILLET
- HEAT AND STIR, UNTIL THICKENED; SPOON ONTO CHICKEN
SERVE HOT, WITH HOT COOKED RICE
