    Here's a recipe I had picked up but don't remember from whom!


    Recipe Introduction


    Serves 2 - 4


    List of Ingredients


    • 4 tblsp (12 tsp) vegetable oil (I like using peanut oil)
    • 600 g (1.32 lb) chicken pieces cut quite small
    • 1-2 fresh hot chillies, cut into thick rounds
    • 1 tblsp (3 tsp) chinese dark soy sauce
    • 1 tblsp (3 tsp) chinese light soy sauce
    • 1 1/2 tsp (.33 tbsp) sugar
    • 1 large onion peeled and cut in 5 mm rounds


    Instructions


    1. Heat the oil in a non stick frying pan over a medium high heat.
    2. When hot, add the chicken and brown all over. Lift out with a slotted spoon and set aside.
    3. Pour out all but 3 tblsp oil and turn heat to medium. Add the chilies, stir and fry for a few seconds.
    4. Return the chicken any accumulated juices to the pan. Add 4 tblsp water and bring to a simmer. Cover, turn heat to low and simmer for 10 minutes.
    5. Add the two soy sauces, the sugar and the onions. Cover, turn heat to low and simmer for about 5 minutes more or until the chicken is cooked. There should be very little liquid left at the end of cooking.


    Final Comments


    Serve with plain rice and a vegetable.
