Sambal Ayam Bali - Balinese Lemon Grass

A recipe I had picked up in the Pacific.
Recipe Introduction
This is a great dish served in Bali, simple but tasty.
Serves 4.
List of Ingredients
- 3 sliced Shallots
- 1 sliced (very thinly, only white part) Lemon grass
- 1/4 cup (65g) Oil ( I use peanut oil)
- salt (as needed)
- 3 sliced Holland red peppers
- 1-1/2 tsp. (7g) Shrimp paste
- 10 chopped Birdseye chilis
- 2 deboned chicken breasts
- 2 Limes
Instructions
- Season chicken breasts with salt then grill or broil. Set aside until cool enough to be handled. Shred to small pieces with a fork.
- Use mortar and pestle to ground Holland red peppers, birdseye chilis, lemon grass, shrimp paste, and salt coarsely.
- Heat a oil in a wok, then fry ground pieces for a minute then add shredded chicken. Cook until chicken pieces are heated through. Season with more salt as needed. Transfer chicken to a plate and sprinkle with lime juice.

Serving suggestion: Serve hot with rice.
