Coconut Marinated Fish

- 3 pounds tuna fillet
- 1 cup coconut milk
- 1 cup fresh lime juice, strained
- 1 cup pineapple, crushed with juice
- 3 cups tomato concasse
- 1 cup scallions, minced
- 1/2 cup red bell pepper, seeded, large dice
- 1 tablespoon kosher salt
- 1/4 cup parsley, minced
Instructions
- 1. CUT FISH INTO 1/2-INCH CUBES
- 2. COMBINE WITH REMAINING INGREDIENTS-MIX WELL
- 3. COVER AND CHILL FOR 2-3 HOURS
- 4. REMOVE FROM REFRIGERATOR
- 5. LET STAND FOR 15 MINUTES BEFORE SERVING
- 6. ARRANGE IN LETTUCE CUPS AND SERVE SLIGHTLY CHILLED
