    Here's a tasty way to present a flounder dish with a South Pacific flavor.

    List of Ingredients




    40 ounces canned pineapple chunks in
    juice
    6 carrot, sliced diagonally
    3 pounds flounder fillet
    2 teaspoons granulated sugar
    2 teaspoons vinegar
    4 teaspoons cornstarch
    1 teaspoon soy sauce
    2 green bell pepper, cut into thin
    strips
    1 onion, sliced into rings

    Recipe



    1. Drain pineapple juice into a medium saucepan. Add
    sliced carrots and cook covered about 15 minutes until
    barely tender
    2. Place fillet in greased baking dish. Bake 20 minutes at
    425 degrees F. Mix vinegar, sugar, cornstarch, and soy
    sauce.When carrots are just tender, add pineapple, green
    pepper, onion, and cornstarch mixture.
    3. Cook about 5 minutes, stirring constantly. Spread
    vegetables over fish.
