Beef & Rice Casserole

- 1 lb. ground beef
- 1 small onion, chopped
- 1/2 cup green pepper or green chile, chopped
- 2 cups cooked rice
- 1 pint canned tomatoes, not drained
- 1½ cups whole kernel corn
- 1 small can sliced ripe olives, drained
- 6 slices bacon, cooked & crumbled
- 2 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. green tabasco sauce
- 1 tsp. salt
- 1½ cups grated cheddar cheese
- 1/2 cup dry bread crumbs
- 1-2 tbsp. melted butter or margarine
Instructions
- Brown beef, onion & green pepper in a skillet over medium heat until meat is cooked through; add rice, tomatoes, corn, olives, bacon and seasonings.
- Bring to boiling, remove from heat and add 1 cup of the grated cheese, stir until cheese is melted.
- Transfer mixture to greased baking dish and sprinkle with remaining cheese.
- Toss bread crumbs with butter and sprinkle over cheese.
- Bake uncovered at 350° for 15-20 minutes or until cheese topping melts.
