Chicken Tetrazzini

- 4 tbsp. butter (divided)
- 2 tbsp. flour
- salt to taste
- white pepper to taste
- 2 cups milk
- .
- 1/4 cup diced fresh onion
- 1/2 cup sliced fresh mushrooms
- 1 - 1½ cups diced cooked chicken
- 1 cup cooked spaghetti
- 1 tbsp. lemon juice
- .
- 1/4 cup fresh grated parmesan
- 1/4 cup buttered bread crumbs
Instructions
- Make a white sauce with the first five ingredients: Melt 3 tbsp. of the butter in saucepan, blend in flour & seasonings until smooth. Stir over medium heat for 2 or 3 minutes (this is the roux).
- Add milk to the roux, stirring until smooth, and continue cooking over medium heat until thickened.
- Melt remaining tbsp. of butter in a large skillet; add onion & mushrooms; sauté until softened.
- Add diced chicken, spaghetti, lemon juice & white sauce to the skillet; mix together gently.
- Combine grated parmesan with buttered bread crumbs.
- Place chicken mixture in a baking dish, top with bread crumbs mixture and heat in a 350° oven until bubbly and crumbs have browned.
- Serve while hot.
