1 8-oz can tomato sauce
1 tbsp. Splenda brown sugar blend or Sugar Twin brown sugar replacement
2 tsp. minute tapioca
1/2 tsp. salt
1/2 tsp. pepper
1½ - 2 TBS. paprika
1½ lbs. lean beef, cut into 1" chunks
1 large onion, chopped
2 cloves garlic, crushed (or 2 tsp. minced garlic from a jar)
1 15-oz can diced tomatoes, drained
3/4 to 1 cup sour cream or lite sour cream
Recipe
Combine first six ingredients & set aside for about 15 minutes until the tapioca thickens.
Combine thickened sauce with next four ingredients and place in 2-quart crockpot on LOW for 8-9 hours.
Just before serving, stir in sour cream.
Can be eaten alone like a stew, or served over noodles, rice, etc.
