Spaghetti with Rubies (i.e., beets)

List of Ingredients
- 2 cloves minced garlic
- pinch crushed red pepper
- olive oil as needed
- salt to taste
- 2-3 cups beets, cooked, peeled & diced
- spaghetti or linguini, cooked & drained
Instructions
- Sauté garlic and red pepper in olive oil until sizzling and fragrant.
- Add beets and toss until coated.
- Add pasta and some of the cooking water; toss until coated and simmer until evenly colored, stirring constantly - about 2 minutes.
- Serve immediately.
Final Comments
This simple dish is simply delicious - a good side dish with schnitzel or a breaded chicken filet
