    Succotash Skillet Dinner

    List of Ingredients


    • 1 cup raw macaroni
    • 1 lb. ground beef
    • 1 large onion, chopped
    • 1-1/2 - 2 cups succotash *
    • 1 can condensed cream of mushroom soup, undiluted
    • 3/4 cup sour cream
    • salt, black pepper & Cajun seasoning to taste
    • chopped parsley for color
    • .
    • * packaged frozen succotash may be used, or make your own combining equal parts whole kernel corn and baby lima beans (again, frozen products) and cooking for 8-10 minutes; drain well.


    Instructions


    1. Cook macaroni according to package directions.

    2. Brown ground beef & onion together until beef is cooked through and onion is still a little crispy (that's if you like your cooked onion left "a little crispy"; if not, cook it some more)

    3. Add soup, sour cream, succotash, seasonings & parsley.

    4. Drain the macaroni & add it too; mix well & serve.

    5. (may also be made by ignoring step 1: by browning meat & onions - then adding 1 cup raw macaroni to the skillet along with 1½ cups hot water, and simmering for 6-8 minutes until macaroni is al dente. Proceed with step 3, heat and serve.
