Summer Squash Casserole

List of Ingredients
- 2 lbs. yellow squash or zucchini, diced
- 1/4 cup chopped onion
- butter/oil as needed
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup grated carrot
- 1 stick margarine
- 1 8 oz. pkg. dry stuffing mix
Instructions
- Sauté squash & onion in a small amount of butter.
- Combine soup & sour cream; fold in carrot; add to squash/onion mixture.
- Place in greased 13x9" casserole dish.
- Melt margarine and add stuffing mix. Toss to combine well, and spread on top of squash in pan.
- Bake at 350° for 25 minutes.
