    Summer Squash Casserole

    List of Ingredients


    • 2 lbs. yellow squash or zucchini, diced
    • 1/4 cup chopped onion
    • butter/oil as needed
    • 1 can cream of chicken soup
    • 1 cup sour cream
    • 1 cup grated carrot
    • 1 stick margarine
    • 1 8 oz. pkg. dry stuffing mix


    Instructions


    1. Sauté squash & onion in a small amount of butter.
    2. Combine soup & sour cream; fold in carrot; add to squash/onion mixture.
    3. Place in greased 13x9" casserole dish.
    4. Melt margarine and add stuffing mix. Toss to combine well, and spread on top of squash in pan.
    5. Bake at 350° for 25 minutes.
