Brisket Dry Rub & BBQ Sauce

List of Ingredients
- 1/4 cup paprika
- 1/2 cup brown sugar
- 2 tsp coarse salt (like kosher)
- 1 tsp celery salt
- 1 tsp black pepper
- 1 - 3 tsp cayenne pepper, depending how hot you like
- 1 tablespoon dry mustard
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- For a 10-lb brisket, mix all the above ingredients together. Rub generously all over the meat and let it sit for about an hour.
- Build your fire and place the brisket over the hot side, and sear 30 minutes on each side.
- Move off to the cool side of the grill and wrap in foil. Cook for about 5-8 hours depending on the size of the brisket.
- During the last hour, remove from foil, and baste every 10 minutes with the following sauce:
- Use one bottle of your favorite barbecue sauce and add:
>> red wine vinegar
>> honey
>> apple juice
- Mix all ingredients in a saucepan, and simmer until reduced to a thick syrup. Takes awhile to do this. Gary has no idea of the amounts in the recipe, but again, it'll be good no matter what. Dip a piece of white bread in it to taste it- the tried-and-true way to tell.
