    Dave's Dry Rub Ribs

    The rub mix makes about enough for 1 1/2 racks of ribs, depending on how heavy you apply it.


    List of Ingredients


    • 1 tablespoon paprika
    • 1 tablespoon black pepper
    • 3 tablespoons dark brown sugar (go for 4 if you like sweeter)
    • 1 1/2 teaspoons salt
    • 1 teaspoon garlic powder
    • 1 teaspoon dry mustard
    • 1 teaspoon cumin
    • 1/4 teaspoon cayenne pepper
    • Pinch of onion powder (although I normally do a few pinches)
    • 1 1/2 racks of ribs


    Instructions


    1. Mix together the first nine ingredients to make the dry rub.
    2. Remove the membrane from the back of ribs (this is the clear, thin film on the "white" side of the ribs). Just put a knife under one corner and then peel off. With a little practice it is easy.
    3. Rub the spices mixture onto front and back of ribs, apply all you want. Cover tightly and refrigerate for at least two hours, or overnight is better.
    4. Remove ribs from frig and let set at room temp. for 1/2 hour.
      Warm smoker (what I use) or grill to 200-225 degrees.
    5. Place unwrapped ribs on grill or in smoker for about 1 hour. If using grill, make sure it is not above direct heat.
    6. After 1 hour, wrap ribs in foil tightly and continue to cook until done, about 1 1/2 hours more. The internal temp. should be around 175 degrees, the temp. will continue to rise a little after removing.
    7. Unwrap and let set for about 15 min. Then dig in.
    8. Sometimes, when I feel like it I will turn the flame up on the grill and "finish" them out, giving a little crust on the outside with a high flame. Does nothing for the taste but looks a little nicer.


    Final Comments


    This may sound hard but it is REALLY easy, give it a try, the most important part is keeping a low temp. Over time you can adjust the rub to your taste.
