Brown Rice Pilaf

- 2 tbsp. butter or margarine
- 1 cup brown rice
- 1 rib celery, diced
- 1 cup sliced fresh mushrooms
- 2 cups chicken broth
- dash of curry powder (optional)
- 1 bunch scallions, chopped (green tops too)
- 1/3 cup toasted sliced or slivered almonds
Instructions
- Melt butter in large skillet; saute rice, celery & mushrooms for several minutes, stirring frequently
- Add broth and curry powder; bring to boiling
- Cover, reduce heat and steam for about 45 minutes until all liquid is absorbed
- Add scallions & almonds; toss lightly & serve
