Cuban Black Beans

List of Ingredients
- 1 lb. black beans
- seasoned salt as needed
- black pepper as needed
- 1 - 2 tbsp. olive oil
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 2 - 3 jalapenos, finely chopped
- 2-3 cloves garlic, minced
- ½ - 1 tsp. oregano
Instructions
- Wash beans and soak overnight.
- Drain and rinse the beans; place in large kettle with lots of water (1½ to 2 quarts) and bring to boiling. Add seasoned salt and black pepper as desired. Reduce heat to simmer.
- Heat olive oil in skillet and saute pepper, onion, jalapenos, garlic and oregano until tender and the garlic flavor seeps through; add to black beans and simmer 3-4 hours.
