Spanish Rice

- 2 - 4 strips diced bacon
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 clove minced garlic
- 1 pint canned tomatoes
- 1 cup water
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 bay leaf
- 1/2 cup uncooked rice (converted rice is good)
- cayenne to taste, for extra spiciness (optional)
Instructions
- Sauté bacon in large skillet until about half cooked; add onion, green pepper and garlic - cook until tender.
- Add tomatoes, water, salt, pepper & bay leaves and bring to a boil. Add rice, stir, cover and reduce heat.
- Cook about 30 minutes or until rice is tender and water is fully absorbed. Remove bay leaves and serve hot.
