Chicken Fried Steak & Country Gravy

- 6 medium tenderized steaks (cube steaks or minute steaks)
- 1 cup flour
- 1 cup milk
- 2 cups cracker crumbs
- butter as needed for frying

- Gravy:
- 3 - 4 tbsp flour
- 2 - 3 cups milk
- salt & pepper to taste
Instructions
- Lightly season each steak with salt, dredge it in flour, dip in milk & dredge in crumbs.
- Place in medium-hot skillet with melted butter. Sprinkle with pepper.
- Follow suit with remainder of steaks.
- Cook until deep golden brown, turning once (second side always browns more quickly, so watch carefully after you turn them). Remove from skillet.
- Add 3 - 4 tbsp. flour to drippings, blending until smooth. Cook 3 - 4 minutes.
- Gradually add milk, stirring until smooth.
- Continue to cook & stir until gravy begins to thicken. Reduce heat and cook 5 - 6 more minutes.
- Serve steaks with a ladle of gravy poured over.
