    Basic Muffin Mix and variations

    Recipe Introduction


    You can mix up a large batch of the basic dry mix (flour, sugar, baking powder and salt) and store in a sealed container in your pantry. Then to have fresh muffins in the morning, stir the mix and measure out 3 cups of mix for one dozen muffins, 6 cups for two dozen muffins, etc.; add the wet ingredients and the optional ingredients and bake. Or, for a large group, make a large batch of the basic mix and make one dozen each of a variety of flavors with a lot less work.


    List of Ingredients


    • 4 cups flour
    • 2 cups sugar
    • 4 tsp. baking powder
    • 1 tsp. salt
    • 2 eggs
    • 1-1/2 cups milk
    • 3/4 cup butter-flavored oil


    Instructions


    1. Stir together dry ingredients. Add wet ingredients and any optional ingredients and stir just until moistened.
    2. Spoon into greased muffins tins (a lever-style ice cream scoop works well) and bake at 400F for 20 - 25 minutes or until done.

    Variations:
    Banana NutBanana mashed banana and chopped walnuts.

    Blueberry - add fresh or frozen blueberries

    Pina Colada - add drained crushed pineapple and coconut

    Apple Spice - add peeled chopped apple, cinnamon and nutmeg

    Coffee Walnut - add coffee extract and chopped walnuts

    Pumpkin Spice - add canned pumpkin, pumpkin pie spices, nuts if desired

    Mincemeat - add canned mincemeat and chopped nuts

    Date Nut - add chopped dates and nuts

    Cranberry - add chopped fresh cranberries, nuts and orange rind

    Chocolate chip - add chocolate chips and a little vanilla, nuts if desired

    Cherry Almond - add chopped dried cherries and toasted, flaked

    Anything else you can think up. Adjust amount of milk in batter depending on the moistness of the added ingredients
