    Quick Yeast Buns

    List of Ingredients


    • 2 pkgs. active dry yeast
    • 3 cups all-purpose flour
    • 2/3 cup non-fat dry milk
    • 1/2 cup sugar
    • 1/2 tsp. salt
    • 6 tbsp. oil or melted shortening
    • 3 well-beaten eggs
    • 1-1/2 - 2 cups warm water (as needed for soft but not sticky dough)
    • 3-1/2 cups more all-purpose flour


    Instructions


    1. Combine first eight ingredients and blend until smooth.
    2. Gradually knead in remaining flour until smooth & elastic.
    3. Let rise until double in bulk; gently deflate dough, shape into buns & place on greased baking sheet.
    4. Let rise again & bake about 18 minutes in preheated 350F oven.


    Final Comments


    For fairly large hamburger buns, make about the size of a lime or small lemon; for hot dog buns, shape accordingly. These make nice dinner rolls too - just use smaller pieces & place close together in a square pan, instead of on a baking sheet.
