Quick Yeast Buns

List of Ingredients
- 2 pkgs. active dry yeast
- 3 cups all-purpose flour
- 2/3 cup non-fat dry milk
- 1/2 cup sugar
- 1/2 tsp. salt
- 6 tbsp. oil or melted shortening
- 3 well-beaten eggs
- 1-1/2 - 2 cups warm water (as needed for soft but not sticky dough)
- 3-1/2 cups more all-purpose flour
Instructions
- Combine first eight ingredients and blend until smooth.
- Gradually knead in remaining flour until smooth & elastic.
- Let rise until double in bulk; gently deflate dough, shape into buns & place on greased baking sheet.
- Let rise again & bake about 18 minutes in preheated 350F oven.
Final Comments
For fairly large hamburger buns, make about the size of a lime or small lemon; for hot dog buns, shape accordingly. These make nice dinner rolls too - just use smaller pieces & place close together in a square pan, instead of on a baking sheet.
