Sage Sausage Stuffing

- 1 medium onion, chopped
- 2 ribs celery, diced
- 8 ounces sliced fresh mushrooms
- 2 cans low-sodium chicken broth *
- 2 or 3 tsp. poultry seasoning
- 1 tbsp. prepared mustard
- 2 sticks dairy butter, melted *
- 1/2 pound Jimmy Dean sage sausage, cooked & crumbled
- 1/2 cup chopped walnuts
- 1 bag white bread cubes
- 1 bag wheat bread cubes
- .
- * increase broth & butter if needed for more moist stuffing
Instructions
- Saute onion, celery & mushrooms in butter just enough that mushrooms begin to wilt.
- Add broth, poultry seasoning & mustard; heat to boiling
- Combine with sausage, walnuts & bread cubes; toss lightly.
- Loosely fill cavity of turkey or chicken and roast the bird immediately.
- Or place stuffing in baking pan & bake 45 minutes at 350°.
