Shortcake for Strawberries

- 2 cups flour
- 1/4 cup sugar
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1/2 cup butter
- 1 beaten egg
- 2/3 cup cream
Instructions
- Sift dry ingredients together; cut in butter until mixture resembles coarse crumbs.
- Combine egg and cream; add all at once to dry ingredients and stir only enough to moisten.
- Turn out on lightly floured surface and knead just enough to bind it together, about 30 seconds.
- Press out about 1/2 to 3/4 inch thick and cut out cakes with a sharp cutter - do not twist as you cut.
- Bake on ungreased baking sheet about 10 minutes at 450F, or until golden.
Final Comments
If you like your shortcake less sweet, cut the sugar in half.
